time for soup and sandwiches


on winter nights when it seems like we are bouncing from school to ballet to tae kwon do and every where in between, i love to make soup.




on tonight's menu: roasted butternut squash and shallot soup. it is a simple three step process: roast, blend, simmer. this soup is so good! better than that, i can do everything but warm it up earlier in the day.




then we finally get home, warm it up, make some grilled cheese and dinner is served.

I've got a big butternut squash staring me in the face. I was pondering soup or perhaps stuffing the bulbous part and roasting the rest. The soup is good, though?

Boy this soup looks sooo good! I would never think of making it this way.What spices do you use?
